WHEN yet another staple gets a makeover, it never fails to raise a wry smile. In a flash, something that has languished in the "peasant cuisine" category is suddenly elevated to the gastronomic and fashionable high ground.

Spelt is a grain that was brought to Britain by the Romans. It has always been popular in the Middle European countries presumably the Legions dropped it off there as well and is at the heart of "cucina povera" in northern Italy, where it is known by some as farro (another school of thought has it that farro and spelt are grains that are closely-related rather than being identical).
