The new venture is the brainchild of owners and directors Aarron and Mitchell Walbourne, whose SALT - Street Food Kitchen & Bar continues to top customer review site Trip Advisor's rankings.

SALT, which opened two years ago, has taken the town by storm with locals and visitors flocking to the Grange Road restaurant to try its popular burgers, bao buns and burritos.

Dough will offer "Italian food with a twist", adding to the international cuisine already on offer at the market - which has six street food huts on offer.

A delighted Aarron said: "We launched SALT two years ago and it is really thriving, but we don't want to rest on our laurels, the time is right to diversify, and to launch Dough at Darlington Indoor Market is an exciting prospect.

"We have a passion for Italian cuisine, so this is the perfect opportunity to take that passion and impose our own style on it - this is Italian cuisine with a twist, and you will find lots of variety and high-quality food using, where we can use local suppliers, or shipped from Italy.

"We are Darlington boys, and to be able to bring something that boosts not only the food scene but benefits the area as a whole fills us with lots of pride.

"The indoor market location is perfect for us and will allow us to offer lunchtime trade too, something SALT does not really do. It is a market with so much history and character and it's a privilege that we can complement the multicultural food in one space.

"Food is a mood and there is so much choice here."

Aarron added that the new venture will also create around 10 new jobs ranging from chefs to front of house.
