Summer salad with a cheesy twist

I make this the easy way by buying bought vacuum packed beetroot rather than baking it from scratch

The other versatile thing about this recipe is that you can change the cheese depending on your taste.

I use either a soft blue cheese or feta.



Serves 2 can be doubled ¦ 1 medium beetroot sliced ¦ ½ pear sliced into rings ¦25g pinenutsorwalnuts toasted ¦ 100 g feta or blue cheese crumbed ¦ 2 cups of mixed salad leaves 80ml good quality olive oil ¦ 1 tbsp honey ¦ 2 tbsp balsamic vinegar
