While many of us are looking forward to tucking into turkey and all the trimmings on Christmas Day, spare a thought for the people who will be slaving away in kitchens up all over the region to ensure we can.

While Christmas is undoubtedly a time for joy and laughter, the prospect of having to deliver a festive feast for expectant relatives can leave people crying into their bucks fizz.

Having come to our rescue with tips on how to decorate Christmas trees and lay tables for Christmas dinner, John Lewis were on hand to give us a final Yuletide masterclass on how to prepare the all important turkey and the essential roast potatoes as well as tips on how to best manage your time so the only heat in your kitchen will be coming from the oven!

Brasserie senior chef Lee Williams offered an alternative to stuffing the 5kg turkey he demonstrated on; rather than going for a homemade or shop bought sage and onion mix, he opted for a flavoured butter to put under the skin of the bird.

This involve grating the zest of two oranges into a bowl of butter; "it shouldn't overpower the turkey but it will give it some perfume and orange is a really festive scent."

Into the mix he put some olive oil, black pepper, parsley, thyme and a teaspoon of garlic before rubbing it all together.

"When you're putting under the skin it's important just to tease the thigh and crown with your fingers; you don't want any tears.

"Form your butter mix into balls and gently put them under the skin.

"I then like to lay strips of streaky bacon on the top of the turkey to protect the crown."
